  • 3 medium avocados
  • 4 scoops of liquid raw coconut oil (60 ml)
  • 2 scoops of lemon juice (30 ml)
  • 1 scoop of sea or Himalayan salt (5 g)
  • 6 scoops of nutritional yeast (90 g)
  • ΒΌ cup of fermented vegetable drink (62.5 ml)
  • 2 scoops of psyllium powder (30 g)
  • 2 tablespoons of dehydrated oregano leaves (20 g)

  • First, cut the avocados in half and extract the pulp.
  • Then put everything in a blender and add coconut oil and lemon juice.
  • Then add the salt, nutritional yeast and fermented vegetable drink.
  • Beat for 2 minutes, then add powdered psyllium .
  • The mixture should be smooth and thick.
  • Once it has the desired consistency, take a large cheese mold or several small molds or rings and fill them with the avocado batter on the parchment paper.
  • Place the preparation in the refrigerator for at least 8 hours. After that time, check if they are with good consistency.
  • Finally, demould and bread with dried oregano leaves.

Ingredients (for 3 liters)

  • 1 cup of buckwheat, quinoa or kamut grains (200 g)
  • 12 cups of water (3 liters)

Preparation

  • First, put the beans to germinate until the sprout appears. To do this, place the beans in the glass jar and let them soak for approximately 8 hours.
  • Cover the container with the cloth and secure it with the rubber band or string.
  • Afterwards, drain the water and leave the bottle tilted downwards and diagonally for another 2 days.
  • During this time, be sure to water them several times so that the grains will germinate little by little. After that, rinse them and fill the glass with twice as much water.
  • Then let them soak for another 24 hours. During this time, the sprouted grains should ferment the liquid.
  • After all the steps indicated, strain the water and store it in the glass inside the refrigerator. If you want, you can repeat the fermentation with the same beans twice more, but only for 12 hours.

Note : you can also use pea beans or spelled ( Triticum spelta ) among others. The most important thing is to comply with the fermentation process. One thing to consider is that if the temperature is high, the drink will be more fermented. Therefore, it is likely that if the temperature is cold you will need more time for the process.
